DRESSING UP YOUR SALADS



Basic Dressing
¼ C Olive Oil
1 Lemon or lime
Dash of flax seed oil
Dash of vinegar
Herbs to taste
SHAKE!

Tahini Dressing
½ C Tahini
Big dash of lemon or orange or any citrus for that matter!
1 clove of garlic (omit if not a garlic fan-Im not)
Salt n Pepper
Herbs to taste
MIX VIGOROUSLY!

Sweet Carrot Dressing
½ C Carrot juice
or
1-2 Whole carrots with 1 C water
1 T Apple cider vinegar
1 t Maple syrup or agave
1 t Salt
½ Avocado
or
2 T Tahini
Dash of chilli powder if desired
BLEND!




Thai Dressing
Quarter a bunch of coriander, chopped
1 T fresh lemon grass, chopped
1 thumb of fresh ginger, chopped
¼ C coconut meat or water
1 Kefir lime leaf, chopped fine
Touch of maple syrup
Dash of salt
Squeeze of lemon
BLEND!


Ginger Cream
1 thumb of ginger, chopped
1 T agave
Dash of salt
Small handful of white nuts, soaked an hour
BLEND!

Sunset Dressing
¼ C Cashews
1 Small Red Capsicum, chopped
1 small yellow capsicum, chopped
1 T coconut oil
Dash of lime
5 raisons, chopped
BLEND!

Avocado Dressing
1 Avocado
½ lemon
Pinch of thyme
Garlic
Salt
MASH!

White Sauce
¼ head of cauliflower
½ C Orange Juice
1 T Tahini
5 Raisins
2 T flax oil
1 T sesame oil
Small clove of garlic
1 Spring onion
Dash of paprika
Salt and pepper to taste
BLEND!

Tomato Sauce
1 C fresh tomatoes, chopped
½ C soaked sun dried tomatoes
Squeeze of lemon
1 T dried herbs
¼ C olive oil
Salt n pepper
Dash of agave to sweeten if desired
BLEND

Homous
2 C sprouted chick peas
1 C sesame seeds , soaked overnight
2 T parsley, chopped
½ C olive oil
Juice of 2-3 lemons
2 cloves of garlic, minced
Paprika
Salt to taste
Water to add for blend
METHOD
-Blend ingredients in a blender, adding water when required
-pour into container. Sprinkle with paprika. Drizzle with olive oil.

POP salad


Pop Salad
½ head of cauliflower, chopped
½ head of broccoli, chopped
Juice of 1 lemon
Meat of 4 finger limes
½ bunch of fresh coriander, chopped fine
3 sprigs of mint, chopped fine
20 cherry tomatoes, halved
½ C olive oil
2 T flax seed oil
Salt and pepper to taste
METHOD
-Place both the broccoli and the cauliflower into blender and pulse only, until the floweret’s have turned the size of rice.
-Place cauli and broccoli in a bowl (omit one or the other for difference)
-Mix in the rest of the ingredients
SERVE!

Fennel Salads!


Fennel Salad no 1
½ bulb of fennel root, sliced into chunks
½ ripe pear, sliced
1 C cherry tomatoes
½ C sprouted sunflower shoots
½ avocado, sliced
½ C olive oil
Squeeze of half a lemon
1 T honey
METHOD
-Mix Olive oil, lemon and honey together.
-Pour dressing through salad and gentle toss.
-Add Generous sprinkle of sprouted spelt to garnish and serve

Fennel Salad no 2
½ a bulb of fennel root, sliced
Bunch of rocket, chopped
2 T pine nuts
5 sundried tomatoes, chopped and soaked
Chunks of wakame seaweed
1 Yellow capsicum, finely sliced
1 t mixed dried herb
METHOD
-Toss it and sing!

Asparagus Salad


Asparagus Salad
1 bunch of Asparagus, chopped
1 red capsicum, sliced thinly
2 T Fennel leaves, chopped
3-4 Floweret’s of broccoli, chopped small
½ Avocado
½ squeeze of lemon
1 small clove of garlic
Salt n pepper to taste
METHOD
-Place asparagus, capsicum and broccoli in salad bowl.
-Blend the rest of the ingredients for dressing
-Add dressing, toss and serve

Kale Mushroom Wakame


Kale Mushroom Wakame
1 bunch of kale, chopped into chunks
2 C Mushrooms, sliced thick
1 C Wakame seaweed, chopped into chunks (keep dry)
¼ C sesame seeds
Juice of 1 lemon
2 T Tamari Sauce
3 Sprigs of spring onions, chopped
Salt to taste
METHOD
-Mix all ingredients into a salad bowl and allow to stand for 10 minutes
SERVE!

Cabbage on da side



Cabbage On Da Side
¼ head of green cabbage, sliced thinly
¼ head of purple cabbage, sliced thinly
1 T salt
2 T sesame seeds
½ C sesame oil
MASSAGE or MIX well and serve.

1 well mashed Avocado
3-4 T Carob or cacoa powder
5-10 dates, soaked

Method
Put ingredients through the blender until doughy enough to roll and then place teaspoon size balls in a bowl of carob/cacao powder to roll into balls. There you have it baby x
