Beet Witches
1 or 2 large beetroots
1 C sprouted Spelt
1 C Alfalfa sprouts
Salt
Your preferred pesto
METHOD
-Slice beets thinly to
sandwich the sprouts
-Massage salt onto beets
and allow to stand to wilt
-Rinse off salt if you
prefer before use
-Place half the beets
down onto large serving dish
-Spread a little pesto on
each one, then add the sprouts
-Use the remaining half
of the beets to sandwich the tops
SERVE!
