Fennel Salads!


Fennel Salad no 1
½ bulb of fennel root, sliced into chunks
½ ripe pear, sliced
1 C cherry tomatoes
½ C sprouted sunflower shoots
½ avocado, sliced
½ C olive oil
Squeeze of half a lemon
1 T honey
METHOD
-Mix Olive oil, lemon and honey together.
-Pour dressing through salad and gentle toss.
-Add Generous sprinkle of sprouted spelt to garnish and serve

Fennel Salad no 2
½ a bulb of fennel root, sliced
Bunch of rocket, chopped
2 T pine nuts
5 sundried tomatoes, chopped and soaked
Chunks of wakame seaweed
1 Yellow capsicum, finely sliced
1 t mixed dried herb
METHOD
-Toss it and sing!
