Phad Thai
NOODLE
1 zucchini
1 carrot
1 parsnip
SAUCE
1 C young coconut meat
½ C coconut water
½ C white nuts, soaked
1 clove garlic, chopped
Juice of 1 lime
1 t apple cider vinegar
½ t salt
¼ t pepper
½ thumb of ginger
1 T lemon grass, chopped
1 T agave or honey
GARNISH
3 Spring onions
Chopped nuts
Mung bean sprouts
METHOD
-Spiralize noodle veggies
through a spiralizer. If you haven’t got one then slice vegetables very thinly
to make skinny noodles. Or use a potato peeler to achieve the thinness.
-Set aside in a large
bowl
-Blend all the sauce
ingredients and mix into noodles.
-Serve out individual
quantities and garnish.
