Sexy Ol Tart

4 Stalks of rhubarb

1 Punnet of strawberries

2T goji berries (extra for garnish)

½ C macadamia nuts

½ Lemon

The meat from one fresh young coconut

Agave/honey for sweetener

METHOD

-Process all ingredients in a blender until the nuts have creamed into mixture.

-Pour into pie crust (see ‘basic pie crust’ recipe)

-Garnish with strawberries, goji berries and flowers

-Set in the freezer

-Serve with Cashew cream
